This one in core parts is the only variable power supply I am aware of. This one has a version available to use in the simulator with the appropriate spice model (which is what it was made for.)
but it is a lab type power supply rather than like you image. There are a variety of fixed voltage power supplies which a google search of the form “fritzing part power supply” will find, but I don’t know of a variable version.

It isn’t limited, just not exactly what you want. Someone wanted one and and I modified it for the author of the simulator so it will work there as well. There are a variety of other options that the google search will turn up but all that I know of are fixed voltage (which Fritzing other than in the simulator actually doesn’t care about!) Depending on what you want to do one of them should do the job. It is possible to make a custom part if you supply the web site that describes the unit with connections and physical dimensions, but there are so many of them it is easier to use one of the generic ones.
