new to fritzing and wondering is there a parts database of just genertic parts that allow you to add the pin labels after placing them?
In general no. One exception is the generic IC which will allow you to change a variety of parameters and change the internal labels (but has support in the code for doing so.) Most parts need to have the part modified to change anything except the part label (which can usually be changed in Inspector if the part is configured correctly.)

There is not, but this looks like a very good idea.
We already have a “SIM” bin to list the parts that can be simulated.
It is actually not to difficult to create one. Choose “New Bin” from the part widget context menu:
Then drag and drop the parts from other bin into the new bin:
Bins can be exported (see the context menu)
