What is the latest edition of Simon Monk’s book “Fritzing for Inventors” or has there been only one edition?
Since the copy that is sitting beside me is copyright 2016 (I don’t see a publication date though) I’d venture to guess there is only one edition so far.

Yes I found (and am still finding) it useful. Some of the stuff in there I already know, but there are enough useful tips and instructions for Fritzing that I found it useful.
