it appears the package in Mint linux is both old (version 1.0.1 when the latest version is 1.0.4) and misconfigured in that the simulator doesn’t work correctly. The best bet is to use the appimage version of 1.0.4 from the Fritzing.org site (which I have used successfully on Mint linux.)
After that the mosfets are available in core parts (search for mosfet in the core parts search bar)
then drag them in to the sketch. You can change the part number to what ever you want in Inspector like this
