Hi,
i am starting with Fritzing and I was trying to modify default options for some generic parts but all combo boxes are greyed out and when hovering over the parts icons the mouse cursor displays a “not permitted” traffic sign.
It seems that these properties may be changed by the user by not in my case.
What is going wrong?

Welcome aboard! Is the part you are trying to change in a sketch (i.e. in one of breadboard, schematic, or pcb views?) If it is a parts bin it can not be modified, it needs to be in a sketch to be modified, so drag it in to any view and then click on it to select it and use Inspector (the lower right window) to change it.
